beet pesto

oh, hi! so after getting my mommy groove thing on, i'm back! and for now, i
leave you with my favie new recipe...beet pesto pasta :)



Beet Pesto

Ingredients

3 beets, cooked and peeled (i boiled mine in water for about 40 minutes)
1 garlic clove, crushed
1/4 cup raw almonds
2 ounces grated parmesan cheese
pinch sea salt
1/4 cup extra virgin olive oil

Instructions

1. Run beets through a food processor or blender with the garlic, almonds, grated parmesan and sea salt.

2. With the blender running, gradually add the olive oil. Keep and serve refrigerated.

3. Use beet pesto exactly as you would use traditional pesto! Delicioso.
